Applications : Human Food
BICAR® FCC conforms with the FOOD CHEMICALS CODEX (4th Edition), and is therefore suitable for use in a wide range of food applications. Two of the main uses are as baking soda (usually mixed with tartaric acid or cream of tartar to make baking powder) and in effervescent drinks.
Baking soda
Yeast used in cake mixtures and bread doughs, produces an enzyme which acts as an organic catalyst and converts sugar into alcohol and carbon dioxide,which procedes to the expansion of the pastry
BICAR® FCC develops a similar action in presence of high temperature allowing lighter preparations by releasing microbubbles of carbon dioxide which are trapped in the pastry as it cooks.
Effervescent drinks
Sodium bicarbonate also releases carbon dioxide by reaction with water containing a food acid (like citric acid in lemon,....) This makes it highly suitable for use in effervescent drinks, powders and tablets.
